Preparation Steps
  1. Heat a large skillet over medium-high heat and add bacon grease or cooking oil. Once hot, add the lean ground beef and pork sausage. Cook for about 5-7 minutes, breaking the meat apart with a wooden spoon until it’s nicely browned.
  2. Stir in the diced green bell pepper, yellow onion, and celery into the browned meat mixture. Continue to cook for an additional 4-5 minutes until the vegetables soften and the onion becomes translucent.
  3. Sprinkle in the minced garlic along with dried oregano, thyme, chili powder, paprika, and cayenne pepper. Mix everything well and let it cook for another 2 minutes.
  4. Pour in the chicken broth and add the bay leaves, scraping the bottom of the skillet to deglaze. Bring the mixture to a gentle simmer, letting it cook for 5-8 minutes until slightly thickened.
  5. Fold in cooked rice and chopped fresh parsley, stirring gently. Allow to simmer for another 5 minutes and serve.
