  • 2 pieces Ancho Chilies deseeded
  • 2 pieces Arbol Chilies optional

  • 1 large White Onion or yellow onion
  • 4 cloves Garlic Cloves peeled or unpeeled
  • 4 cups Low-Sodium Beef Broth or vegetable broth
  • 1/4 cup Apple Cider Vinegar or white vinegar
  • 2 tbsp Kosher Salt
  • 1 tsp Ground Black Pepper
For the Spice Mix
  • 1 tbsp Ground Cumin
  • 1 tbsp Dried Mexican Oregano
  • 1/4 tsp Ground Cloves use sparingly
  • 1/4 tsp Ground Cinnamon just a pinch
  • 1 tsp Ground Ginger
  • 2 pieces Bay Leaves remove before serving

Step-by-Step Instructions
  1. Prepare Chilies: Deseed and rinse guajillo, ancho, and arbol chilies. Simmer in water for about 15 minutes until soft.
  2. Roast Vegetables: Preheat broiler. Place tomatoes, onion, and garlic on a baking sheet and broil for 4-6 minutes until charred.
  3. Make Sauce: Blend softened chilies, roasted vegetables, beef broth, vinegar, and spices until smooth.
  4. Slow Cook: Place beef roast in slow cooker, pour sauce over, add bay leaves, season, and cook on low for 8-9 hours.
  5. Shred and Combine: Remove beef, shred, return to slow cooker, and mix in sauce.
  6. Serve: Ladle into bowls or fill tacos, garnish with onion, cilantro, and lime wedges.
