  • 8 oz Linguine Substitute with gluten-free pasta if preferred.
  • 1 bunch Broccolini Broccoli can be a great alternative.
For the Flavor Boost
  • 1/2 cup Castelvetrano Olives Kalamata or green olives can be used.
  • 2 tbsp Lemon Juice Freshly squeezed.
  • 2 scallions Scallions (Green Onions) Shallots can be an excellent substitute.
  • 2 cloves Garlic Opt for fresh.
For the Richness
  • 1/2 cup Parmesan Cheese Swap with nutritional yeast for a vegan version.
  • 2 tbsp Olive Oil Avocado oil can also work.
  • 2 tbsp Butter Vegan butter or margarine can be used.
For the Crunch
  • 1 cup Crispy Whole Grain Breadcrumbs Use gluten-free breadcrumbs if necessary.
  • 1 tsp Kosher Salt Adjust to taste.
  • 1 tsp Black Pepper Freshly cracked pepper recommended.

Method
 

Step‑by‑Step Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the broccolini and blanch for 2 minutes. Transfer to ice water.
  2. In a skillet, pour olive oil and add breadcrumbs. Sauté for about 3–5 minutes until golden brown.
  3. Increase heat and char the blanched broccolini for about 2–3 minutes on each side. Chop into smaller pieces.
  4. Cook linguine in boiling water according to package instructions for about 8–10 minutes. Reserve a cup of pasta water.
  5. In the same skillet, add butter, then scallions and minced garlic. Cook for 1–2 minutes until fragrant.
  6. Pour in reserved pasta water, then add drained linguine, lemon juice, and parmesan cheese. Mix until cheese melts.
  7. Plate the dish and top with toasted breadcrumbs, extra parmesan, and season with salt and pepper.

Notes

For best results, reserve pasta water and do not skip the ice bath after blanching the broccolini.
