- Bring a large pot of salted water to a boil over high heat. Add the broccolini and blanch for 2 minutes. Transfer to ice water.
- In a skillet, pour olive oil and add breadcrumbs. Sauté for about 3–5 minutes until golden brown.
- Increase heat and char the blanched broccolini for about 2–3 minutes on each side. Chop into smaller pieces.
- Cook linguine in boiling water according to package instructions for about 8–10 minutes. Reserve a cup of pasta water.
- In the same skillet, add butter, then scallions and minced garlic. Cook for 1–2 minutes until fragrant.
- Pour in reserved pasta water, then add drained linguine, lemon juice, and parmesan cheese. Mix until cheese melts.
- Plate the dish and top with toasted breadcrumbs, extra parmesan, and season with salt and pepper.
