Step-by-Step Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pit the sweet cherries and slice them in half.
  3. In a medium bowl, combine halved cherries, lime juice, vanilla extract, cane sugar, salt, and melted coconut oil, stirring gently until coated.
  4. Spread the cherry mixture in a single layer on the baking sheet.
  5. Roast the cherries in the preheated oven for about 18 minutes until golden-brown and syrupy.
  6. Remove from the oven and let cherries cool for about 5 minutes.
  7. Scoop Greek yogurt into a serving bowl and top with warm roasted cherries and a sprinkle of granola.
  8. Serve immediately.
