Ingredients
  

Marinade
  • 2 pounds boneless leg of lamb cut into cubes
  • ½ cup olive oil extra virgin preferred
  • 1 large yellow onion finely chopped
  • 3 cloves garlic peeled and minced
  • ¼ cup fresh dill
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon lemon zest
  • 2 teaspoons dried oregano
  • to taste salt & pepper
Skewers
  • 1 medium zucchini cut into thick slices
  • 1 medium yellow squash cut into thick slices
  • 1 medium red onion cut into chunks

Method
 

Preparation
  1. In a food processor, pulse together olive oil, yellow onion, garlic, dill, lemon juice, lemon zest, oregano, salt, and pepper until smooth.
  2. Marinate lamb in a Ziploc bag with the marinade for at least 4 hours or overnight.
  3. Preheat grill to medium-high heat (400-450°F).
  4. Assemble skewers by threading marinated lamb and vegetables on soaked skewers.
  5. Grill skewers for about 7-8 minutes, turning occasionally until medium-rare.
  6. Remove skewers from grill, let rest for a few minutes, then serve with mint couscous.
