- In a food processor, pulse together olive oil, yellow onion, garlic, dill, lemon juice, lemon zest, oregano, salt, and pepper until smooth.
- Marinate lamb in a Ziploc bag with the marinade for at least 4 hours or overnight.
- Preheat grill to medium-high heat (400-450°F).
- Assemble skewers by threading marinated lamb and vegetables on soaked skewers.
- Grill skewers for about 7-8 minutes, turning occasionally until medium-rare.
- Remove skewers from grill, let rest for a few minutes, then serve with mint couscous.
