For the Salad
  • 1 pound Hamburger Meat or ground turkey/chicken for lighter option
  • 1 can Kidney Beans drained
  • 1 can Chili Beans use spicier varieties for added heat
  • 2 cups Tomatoes diced, any ripe tomatoes or halved cherry tomatoes
  • 4 cups Lettuce Iceberg or Romaine preferred
  • 1 cup Sharp Cheddar Cheese or Pepper Jack for added spice
  • 1 bag Nacho Cheese Doritos can be swapped for plain tortilla chips
For the Dressing
  • 1 cup French Dressing optional, can use Catalina as a sweeter alternative

Method
 

Steps
  1. Cook the ground meat in a large skillet over medium heat for 6-8 minutes until browned. Drain excess fat.
  2. Add kidney beans and chili beans to the skillet, stir, and let simmer on low for 5 minutes.
  3. Chop lettuce and dice tomatoes. Combine in a large bowl.
  4. Add warm meat and beans mixture to the bowl, toss, sprinkle cheese and Doritos on top.
  5. Top with dressing of choice and serve immediately.
