Red Layer
  • 2 cups fresh hulled strawberries
  • 2 tablespoons honey or maple syrup use maple syrup for a vegan option
  • 1 tablespoon lemon juice
White Layer
  • 1 can full-fat coconut milk well-shaken or stirred
  • 1-2 tablespoons honey
  • 1/2 teaspoon vanilla extract
Blue Layer
  • 2 cups fresh blueberries or frozen
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon lemon juice

Method
 

Preparation Steps
  1. Blend fresh hulled strawberries with honey and lemon juice until smooth. Pour into popsicle molds, filling each about one-third full. Freeze for 45-60 minutes until firm.
  2. Whisk together coconut milk, honey, and vanilla extract until smooth. Spoon over the red layer and freeze for another 45-60 minutes until solid.
  3. Blend fresh blueberries with honey and lemon juice until smooth. Spoon over the white layer, filling molds to the top and smooth the surface. Freeze again.
  4. Insert popsicle sticks and freeze for at least 4 hours until completely solid.
  5. Run molds under warm water for a few seconds to remove popsicles and serve immediately.
