Marinade and Cook Chicken
- In a large bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and black pepper to create the marinade.
- Place chicken thighs in a resealable bag, pour marinade over, seal tightly, and refrigerate for at least 30 minutes.
- Preheat grill or skillet to medium-high heat. Remove chicken from marinade, cook for about 5-7 minutes on each side until browned and cooked through.
- Transfer chicken to cutting board to rest for 5 minutes, then slice thinly.
Assemble Bowls
- In serving bowls, add a base of cooked rice. Layer sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- Top with tzatziki sauce and parsley for added flavor and color.
