Ingredients
  

For the Chicken Marinade
  • 1.5 pounds Chicken Thighs swap with chicken breast for a lighter option
  • ¼ cup Olive Oil adds richness
  • 3 cloves Garlic minced
  • ¼ cup Lemon Juice freshly squeezed
  • 2 tablespoons Red Wine Vinegar apple cider vinegar works as a good substitute
  • 1 tablespoon Dried Oregano fresh oregano can be a substitute
  • 1 teaspoon Ground Cumin for warmth
  • to taste Salt to enhance flavors
  • to taste Black Pepper to enhance flavors
For the Bowl Assembly
  • 4 cups Cooked Rice or cauliflower rice for low-carb option
  • 1 cup Cherry Tomatoes sliced or diced
  • 1 medium Cucumber diced
  • ½ medium Red Onion thinly sliced or pickled
  • ½ cup Kalamata Olives omit if desired
  • ½ cup Feta Cheese omit for vegan option
  • 2 tablespoons Fresh Parsley chopped
For the Tzatziki Sauce (optional)
  • 1 cup Greek Yogurt creamy base
  • ½ medium Cucumber grated
  • 1 clove Garlic minced
  • 1 tablespoon Dill fresh or dried
  • to taste Lemon Juice splash

Method
 

Marinade and Cook Chicken
  1. In a large bowl, whisk together olive oil, minced garlic, lemon juice, red wine vinegar, dried oregano, ground cumin, salt, and black pepper to create the marinade.
  2. Place chicken thighs in a resealable bag, pour marinade over, seal tightly, and refrigerate for at least 30 minutes.
  3. Preheat grill or skillet to medium-high heat. Remove chicken from marinade, cook for about 5-7 minutes on each side until browned and cooked through.
  4. Transfer chicken to cutting board to rest for 5 minutes, then slice thinly.
Assemble Bowls
  1. In serving bowls, add a base of cooked rice. Layer sliced chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
  2. Top with tzatziki sauce and parsley for added flavor and color.
