  • 6 lbs Tomatillos Fresh, husked, and washed
  • 1 medium Onion Yellow preferred
  • 8 cloves Garlic Finely crushed
  • 1/2 cup Lime Juice Preferably bottled
  • 4 tablespoons Cilantro Minced
  • 4 teaspoons Ground Cumin
  • 4 teaspoons Red Chile Flakes Adjust for spice preference
  • 4 teaspoons Salt
For Processing
  • 1 pot Water To fill the canning pot

Method
 

Step-by-Step Instructions
  1. Sterilize jars and lids by placing them in boiling water for 10 minutes or running them through a dishwasher.
  2. In a skillet, combine tomatillos, chopped onion, crushed garlic, minced cilantro, ground cumin, lime juice, and water. Simmer for 15-20 minutes.
  3. Blend the mixture until smooth and creamy.
  4. Ladle the sauce into sterilized jars, leaving 1/2 inch of headspace.
  5. Process jars in boiling water bath for 15 minutes.
  6. Remove jars and cool completely on a countertop.
