For the Cod
  • 4 fillets Cod substitute with haddock or halibut as needed
  • to taste Salt
  • to taste Pepper
  • 2 tablespoons Olive Oil for searing
For the Cream Sauce
  • 1 can Coconut Milk full-fat variety
  • 1 large Lemon juiced and zested
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1/4 cup Fresh Cilantro chopped, for garnish
  • 1 tablespoon Fish Sauce can substitute with soy sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Soy Sauce adjust to preference
  • 1 tablespoon Cornstarch mixed with water to thicken
To Garnish
  • 1 slices Lemon
For Serving
  • 4 cups Cooked Jasmine Rice optional

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season cod fillets with salt and pepper on both sides.
  3. Heat a skillet over medium-high heat, add olive oil, and sear the cod for 2 minutes on each side.
  4. In the same skillet, add coconut milk, lemon juice and zest, garlic, and ginger. Simmer for 2-3 minutes.
  5. Introduce fish sauce, brown sugar, and soy sauce. Simmer for another 3-4 minutes.
  6. Whisk cornstarch with water and gradually add to the sauce, stirring until thickened.
  7. Return the cod to the skillet, spoon sauce over the fillets, and ensure well-coated.
  8. Bake in the preheated oven for 10-12 minutes until fish flakes easily.
  9. Garnish with fresh cilantro and lemon slices, and serve immediately with jasmine rice if desired.
