- Preheat your oven to 400°F (200°C).
- Season cod fillets with salt and pepper on both sides.
- Heat a skillet over medium-high heat, add olive oil, and sear the cod for 2 minutes on each side.
- In the same skillet, add coconut milk, lemon juice and zest, garlic, and ginger. Simmer for 2-3 minutes.
- Introduce fish sauce, brown sugar, and soy sauce. Simmer for another 3-4 minutes.
- Whisk cornstarch with water and gradually add to the sauce, stirring until thickened.
- Return the cod to the skillet, spoon sauce over the fillets, and ensure well-coated.
- Bake in the preheated oven for 10-12 minutes until fish flakes easily.
- Garnish with fresh cilantro and lemon slices, and serve immediately with jasmine rice if desired.
