Method
 

Step-by-Step Instructions
  1. In a small bowl, whisk together 4 large eggs, a pinch of salt, and freshly ground pepper until well combined. Set aside.
  2. Heat a non-stick frying pan over medium-low heat for about 1-2 minutes. Add 1 tablespoon of butter and let it melt.
  3. Pour the whisked eggs into the hot pan and cook for 2-3 minutes, occasionally stirring until slightly runny.
  4. Sprinkle half of your crispy cooked bacon and shredded cheddar cheese evenly into the pan, then place a tortilla over it.
  5. Carefully flip the quesadilla after 30 seconds and add remaining bacon and cheese before folding it in half.
  6. Cook for an additional 2-3 minutes, flipping once more until both sides are crispy and cheese is melted.
  7. Remove from the pan, let cool slightly, and slice into wedges. Serve warm.
