  • 1 bunch cilantro can be substituted with parsley
  • 1 large English cucumber other crisp cucumber varieties can work
  • 2 medium Anaheim chilis switch to other chilis based on heat preference
  • 2 stalks green onions other alliums can substitute
For the Dressing
  • 2 tablespoons rice vinegar can be swapped with white vinegar
  • 1 tablespoon sesame oil try toasted sesame oil for more flavor
  • 1 tablespoon soy sauce use tamari for a gluten-free option
  • 1 teaspoon sugar honey or agave can be used as alternatives
  • 1 pinch salt highlights all flavors in the salad

Method
 

Preparation
  1. Wash the cilantro, pat it dry, and chop into 1-inch pieces. Julienne the English cucumber into thin strips. Thinly slice the Anaheim chilis and green onions.
  2. In a large mixing bowl, combine the chopped cilantro, cucumber, chilis, and green onions. Gently toss to distribute evenly.
  3. In a separate bowl, whisk together rice vinegar, sesame oil, soy sauce, sugar, and salt for the dressing until well combined.
  4. Pour the dressing over the vegetable mixture and gently toss until well-coated.
  5. Adjust flavors as needed, then serve immediately or chill for about 15 minutes before serving.
