- In a medium saucepan, combine equal parts water and sugar with sliced jalapeños and fresh cilantro. Over medium heat, stir gently until the sugar dissolves, about 5 minutes. Remove from heat and let cool.
- Moisten the rim of a glass by running a lime wedge around it. Pour Tajin onto a small plate and dip the rim into the mix for an even coating.
- In a cocktail shaker, combine freshly squeezed lime juice and the prepared jalapeño cilantro simple syrup. Fill with ice and shake vigorously for about 15 seconds.
- Strain the mixture into the prepared glass filled with ice cubes. Top with tonic water.
