For the Marinade
  • 1/4 cup olive oil substitute with avocado oil for different flavor
  • 2 limes zest and juice
  • 2 cloves garlic fresh is best, powdered can substitute (1/4 tsp)
  • 1/4 cup cilantro freshly chopped; parsley can be used as alternative
  • 1 tsp coarse sea salt substitute with kosher salt or table salt
  • 4 fillets salmon rich in omega-3; can swap with trout or tofu

Method
 

Step-by-Step Instructions
  1. In a large zip-top bag, combine the olive oil, the zest and juice of the limes, grated garlic, chopped cilantro, and coarse sea salt. Seal the bag tightly and mix the ingredients.
  2. Add the salmon fillets to the bag, ensuring they are coated evenly with the marinade. Seal again, pressing out excess air, and refrigerate for up to 30 minutes.
  3. While the salmon marinates, preheat the oven to 180°C (350°F).
  4. After 30 minutes, remove the salmon from the marinade, letting excess drip off. Line a baking sheet with parchment paper and place the salmon skin-side down.
  5. Place the baking sheet in the preheated oven and bake the salmon for about 15 minutes, checking for an internal temperature of 50°C (125°F).
  6. Once baked, remove the salmon from the oven and let it rest for 5 minutes before serving.
