- In a large zip-top bag, combine the olive oil, the zest and juice of the limes, grated garlic, chopped cilantro, and coarse sea salt. Seal the bag tightly and mix the ingredients.
- Add the salmon fillets to the bag, ensuring they are coated evenly with the marinade. Seal again, pressing out excess air, and refrigerate for up to 30 minutes.
- While the salmon marinates, preheat the oven to 180°C (350°F).
- After 30 minutes, remove the salmon from the marinade, letting excess drip off. Line a baking sheet with parchment paper and place the salmon skin-side down.
- Place the baking sheet in the preheated oven and bake the salmon for about 15 minutes, checking for an internal temperature of 50°C (125°F).
- Once baked, remove the salmon from the oven and let it rest for 5 minutes before serving.
