Ingredients
  

For the Chicken
  • 2 pieces Chicken Breast opt for organic
  • 1 tablespoon Steak Seasoning or homemade blend
  • 1 teaspoon Onion Powder optional
  • 2 tablespoons Olive Oil preferably extra virgin
For the Pasta Salad
  • 8 ounces Penne Pasta can use gluten-free or whole wheat
  • 4 cups Romaine Lettuce or mixed greens/spinach
  • 1/2 cup Parmesan Cheese or nutritional yeast for dairy-free
  • 1/4 cup Lime Juice can substitute with lemon juice
Seasoning
  • to taste Salt & Pepper

Method
 

Cooking Instructions
  1. Coat chicken breasts with olive oil, season with steak seasoning, onion powder, salt, and pepper. Marinate for 10 minutes.
  2. Cook chicken in a skillet for 5-7 minutes on each side until golden-brown and cooked to 165°F.
  3. Let cooked chicken rest for 5 minutes, then slice into strips.
  4. Cook penne pasta in boiling water for 8-10 minutes until al dente. Drain and rinse under cold water.
  5. In a mixing bowl, combine romaine lettuce and Parmesan cheese. Add sliced chicken and cooled pasta, mix gently.
  6. Drizzle lime juice over the salad, toss to combine. Serve immediately or chill for 15-20 minutes.
  7. Store leftovers in an airtight container for up to 3 days.
