Ingredients
  

For the Pasta Base
  • 8 ounces bow tie pasta or any short pasta like rotini
  • 1 cup corn kernels fresh, canned, or frozen
For the Veggies
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup cilantro chopped, leaves and stems
For the Creamy Dressing
  • 1 cup plain Greek yogurt
  • 1 lime fresh lime juice
  • 2 cloves garlic whole
  • 1 teaspoon salt adjust to taste
  • 1/4 teaspoon cayenne pepper adjust to taste
Optional Toppings
  • 1 avocado diced add just before serving
  • 1/4 cup cotija cheese crumbled

Method
 

Instructions
  1. In a food processor, blend together the plain Greek yogurt, fresh lime juice, cilantro leaves, garlic, salt, and cayenne pepper until smooth. Refrigerate the dressing.
  2. Bring a large pot of salted water to a boil and add the bow tie pasta. Cook until al dente, about 8-10 minutes. Drain and cool completely.
  3. Boil corn kernels for 1½-2 minutes until tender, then drain and cool. Prepare cherry tomatoes, red onion, and cilantro.
  4. In a large bowl, combine pasta, sweet corn, halved cherry tomatoes, red onion, and chopped cilantro. Toss gently.
  5. Add the creamy dressing and mix until well coated. Top with diced avocado and cotija cheese just before serving.
