  • 4 fillets Halibut cod or tilapia make great substitutes
  • 2 tablespoons Olive Oil can use avocado oil
For the Crust
  • 1 cup Walnuts or breadcrumbs for a different texture
  • ½ cup Parmesan Cheese nutritional yeast can be used for a dairy-free alternative
For the Sauce
  • 2 tablespoons Lemon Juice always use fresh for best flavor
  • 2 tablespoons Shallots onions can serve as substitute
  • ½ cup White Wine chicken or vegetable broth can be used for a non-alcoholic option

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. Chop the walnuts finely and mix them with grated Parmesan cheese and seasonings in a bowl.
  3. Pat the halibut fillets dry and coat each with the walnut mixture, pressing to adhere.
  4. Place the halibut in the baking dish and drizzle with olive oil. Bake for 15-20 minutes until fish is opaque and flakes easily.
  5. While the halibut bakes, heat olive oil in a saucepan and sauté chopped shallots until translucent.
  6. Add white wine and reduce by half, about 5-7 minutes.
  7. Stir in fresh lemon juice and season to taste, simmering for 2-3 more minutes.
  8. Serve the halibut plated with warm lemon wine sauce spooned over the top.
