Preparation
- Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
- Chop the walnuts finely and mix them with grated Parmesan cheese and seasonings in a bowl.
- Pat the halibut fillets dry and coat each with the walnut mixture, pressing to adhere.
- Place the halibut in the baking dish and drizzle with olive oil. Bake for 15-20 minutes until fish is opaque and flakes easily.
- While the halibut bakes, heat olive oil in a saucepan and sauté chopped shallots until translucent.
- Add white wine and reduce by half, about 5-7 minutes.
- Stir in fresh lemon juice and season to taste, simmering for 2-3 more minutes.
- Serve the halibut plated with warm lemon wine sauce spooned over the top.
