  • 2 cloves Garlic fresh minced preferred
  • 1 teaspoon Dried Oregano can use fresh oregano
  • to taste Sea Salt kosher salt is a great option
  • to taste Black Pepper freshly cracked is best
Salad
  • 1 can Cannellini Beans drained and rinsed
  • 1 can Kidney Beans drained and rinsed
  • 1 can Chickpeas drained and rinsed
  • 1 English Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • 1 Bell Pepper diced
  • 0.5 cup Kalamata Olives pitted
  • 0.5 cup Fresh Parsley chopped
  • 0.25 cup Red Onion thinly sliced
  • 0.25 cup Fresh Basil chopped
  • 0.5 cup Feta Cheese crumbled, optional for vegan option

Method
 

Preparation
  1. In a medium bowl, whisk together the dressing ingredients until well combined and emulsified.
  2. In a large bowl, combine the salad ingredients.
  3. Pour the prepared dressing over the salad and gently toss to coat.
  4. If using, carefully fold in the crumbled feta cheese.
  5. Cover and refrigerate for at least 2 hours to allow flavors to meld.
  6. Gently stir before serving.
