  • 2-3 pieces ripe tomatoes Cut into wedges
  • 1 piece seedless cucumber Sliced into half-moons
  • 1 small red onion Thinly sliced
  • 1 cup kalamata olives Whole olives
  • 1 cup feta cheese Thick slices or crumbled
For the Dressing
  • 2 tablespoons red wine vinegar Adjust to taste
  • 2 tablespoons extra virgin olive oil High-quality oil recommended
  • 1 teaspoon dried oregano Or fresh oregano
  • salt Season to taste
  • freshly ground black pepper Season to taste

Method
 

Preparation
  1. Wash and dry the tomatoes, cucumber, and onion. Cut the tomatoes into wedges, slice the cucumber, and thinly slice the onion. Combine in a bowl with olives.
  2. Add feta cheese and gently mix. Optionally, crumble the feta on top just before serving for presentation.
  3. Drizzle red wine vinegar over the salad and toss to coat evenly.
  4. Add olive oil, salt, and pepper, and stir gently to combine all flavors.
  5. Serve the salad on plates or bowls, garnishing with extra feta, olive oil, and oregano.
