Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Spread the rolled oats, assorted nuts, and seeds on the baking sheet and toast for 10-12 minutes.
  3. Remove from the oven and let cool, then combine with chopped dried fruits and vegan chocolate.
  4. In a large mixing bowl, blend applesauce, almond butter, brown sugar, vanilla extract, salt, and baking powder.
  5. Gradually sift in the all-purpose flour and mix gently.
  6. Fold in the nut and dried fruit mixture until just combined.
  7. Cover and refrigerate the dough for about 2 hours.
  8. Scoop the dough into 12 disks and place on the baking sheet.
  9. Bake for 11-13 minutes or until golden brown around the edges.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
