Preparation Steps
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Blend pitted Medjool dates and ripe bananas in a food processor until smooth.
- Combine almond flour, oat flour, cacao powder, baking powder, baking soda, and salt with the blended mixture. Add melted coconut oil and mix until just combined.
- Fill muffin liners about three-quarters full with the batter.
- Bake for 25 minutes until the tops are springy and cooked through.
- Cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
