Ingredients
  

For the Salad
  • 1 pound Rotini Pasta substitute with gluten-free pasta if desired
  • 1 medium Cucumber diced, organic preferred
  • 1 medium Carrot grated
  • 1 medium Sweet Onion finely diced
  • 1 medium Bell Pepper diced, fire-roasted optional
  • 1/2 cup Kalamata Olives pitted and sliced
  • 1/4 cup Fresh Parsley chopped, dill can be used as substitute
For the Dressing
  • 1 cup Plain Unsweetened Greek Yogurt or dairy-free yogurt for vegan option
  • 3 tablespoons Red Wine Vinegar
  • 2 tablespoons Lemon Juice fresh preferred
  • 2 cloves Garlic minced
  • 1 teaspoon Onion Powder optional
  • 1 teaspoon Dried Oregano or fresh, adjust amount accordingly
  • 1 tablespoon Fresh Dill or use half amount of dried

Method
 

Preparation Steps
  1. Cook the Rotini Pasta in salted boiling water according to package instructions for 8-10 minutes until al dente. Drain and rinse under cold water to stop cooking.
  2. Prepare the vegetables by dicing the cucumber, grating the carrot, and finely chopping the sweet onion and bell pepper. Pit and slice the Kalamata olives. Combine all these in a large bowl.
  3. To make the dressing, add Greek yogurt, red wine vinegar, lemon juice, minced garlic, onion powder, oregano, and dill in a mason jar. Shake well until creamy.
  4. Combine the cooled pasta with the mixed vegetables. Drizzle the dressing over everything and gently mix until well-coated.
  5. Cover the salad with plastic wrap and refrigerate for at least 1 hour. This allows the flavors to meld.
  6. Serve chilled, giving a gentle stir before enjoying.
