Step-by-Step Instructions
  1. Pat the salmon fillets dry with a paper towel; season both sides generously with salt and pepper. Preheat your frying pan over medium-high heat, adding a mix of butter and olive oil until shimmering.
  2. Carefully place the salmon fillets skin-side down into the hot pan. Sear for about 6–7 minutes, until the skin is golden and crispy.
  3. In the same pan, reduce heat to low and add minced garlic and sun-dried tomatoes. Sauté for about 30 seconds until fragrant but not burnt.
  4. Pour in the dry white wine, scraping up any brown bits stuck to the pan. Allow to simmer for about 5 minutes, reducing by half.
  5. Stir in heavy cream and Parmesan cheese. Mix continuously until the cheese melts and the sauce is smooth.
  6. Add fresh spinach to the sauce and stir gently until wilted. Return the salmon fillets to the pan and let everything simmer together on low heat for an additional 5 minutes.
