Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a mixing bowl, toss chicken with salt, pepper, and garlic powder until evenly coated.
  3. Heat olive oil in a skillet over medium-high heat and brown the chicken for about 4 minutes on each side.
  4. Whisk together brown sugar, soy sauce, reserved pineapple juice, rice vinegar, ground ginger, and cornstarch until smooth.
  5. Transfer the browned chicken and pineapple chunks into the baking dish, pour the glaze over and mix gently.
  6. Cover with foil and bake for 25-30 minutes, then remove foil and bake for an additional 5-10 minutes.
  7. Let it rest for 5 minutes before garnishing with green onions and serve over rice or noodles.
