Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, toss halved grape tomatoes with olive oil, smoked paprika, salt, pepper, coriander seeds, and cumin seeds. Spread the tomatoes on the baking sheet and roast for 10-15 minutes.
  3. Remove the baking sheet from the oven and sprinkle crumbled feta cheese over the roasted tomatoes.
  4. Crack large eggs over the tomato and feta mixture on the baking sheet and bake for an additional 8-10 minutes until the egg whites are set.
  5. Garnish with fresh basil leaves and a squeeze of lemon juice. Serve hot with toasted country bread and mixed greens.
