- In a bowl, combine sweet chili sauce, soy sauce, minced garlic, and lime juice to create a marinade. Add chicken thighs, coat well, cover and marinate for at least 20 minutes.
- In a saucepan, heat coconut milk, lime zest, and lime juice over low to medium heat. Add honey or brown sugar if desired, stirring until smooth and thickened, about 5 minutes. Set aside.
