Step-by-Step Instructions
  1. In a bowl, combine sweet chili sauce, soy sauce, minced garlic, and lime juice to create a marinade. Add chicken thighs, coat well, cover and marinate for at least 20 minutes.
  2. In a saucepan, heat coconut milk, lime zest, and lime juice over low to medium heat. Add honey or brown sugar if desired, stirring until smooth and thickened, about 5 minutes. Set aside.
  3. Heat a skillet over medium-high and add oil. Sear marinated chicken for 5-6 minutes on each side until golden brown, reaching 165°F internal temperature. Let rest before slicing.
  4. Serve jasmine rice in bowls and top with sliced chicken. Drizzle coconut lime sauce over the chicken.
  5. Garnish with cilantro and serve with lime wedges for added zest. Enjoy warm.
