Cupcake Preparation
- Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the box vanilla cake mix with eggs, water, and vegetable oil. Mix until smooth and glossy.
- Line a muffin tin with cupcake liners and fill each cup about two-thirds full with the batter. Bake for 18 to 22 minutes until tops are golden and a toothpick comes out clean.
- Remove from the oven and let it cool on a wire rack for about 5 minutes. Transfer cupcakes to the wire rack to cool completely before frosting.
Frosting and Decoration
- In a mixing bowl, add powdered sugar, unsalted butter, heavy cream, and pure vanilla extract. Whip with an electric mixer for 3 to 5 minutes until fluffy.
- Once cooled, frost cupcakes with the fluffy frosting using a spatula or piping bag. Aim for playful swirls.
- Sprinkle sweetened shredded coconut on top for bunny fur. Add marshmallows as bunny ears and finish with pink sanding sugar.
