  • 1 cup Quinoa Rinsed
  • 1 cup Sun-Dried Tomato Pesto
  • 1 cup Plain Greek Yogurt Can substitute with sour cream
  • ¾ cup Shredded Mozzarella Plus ½ cup for topping
  • ½ cup Feta Cheese Crumbled
  • 2 cups Fresh Spinach
  • ½ cup Chopped Sun-Dried Tomatoes Oil-packed preferred
  • 1 medium Red Onion Sliced
  • 1 tablespoon Italian Seasoning
  • 3 cups Vegetable Stock or Water Chicken stock is an option for non-vegetarians
  • to taste teaspoon Salt
  • ¼ cup Fresh Basil For garnish

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 360°F (180°C).
  2. Rinse the quinoa under cold running water for about 1-2 minutes. Drain well.
  3. Combine the rinsed quinoa with 3 cups of vegetable stock or water in a saucepan. Bring to a boil, then reduce to a simmer and cover. Cook for about 15 minutes.
  4. In a large baking dish, mix together the cooked quinoa, sun-dried tomato pesto, Greek yogurt, mozzarella, feta, spinach, chopped sun-dried tomatoes, sliced onion, and Italian seasoning. Adjust with more stock if too dry.
  5. Sprinkle remaining mozzarella on top, cover tightly with aluminum foil, and bake for 30 minutes.
  6. Remove from oven, uncover, and sprinkle additional feta and sun-dried tomatoes on top. Garnish with fresh basil before serving.
