  • 340 grams Fresh Salmon Fillets 170 grams each for ideal stuffing
  • 2 tablespoons Olive Oil For brushing and sautéing
  • Salt To taste

For the Filling
  • 200 grams Baby Spinach Fresh & packed
  • 1 teaspoon Italian Seasoning Substitute with dried herbs if desired
  • 1 teaspoon Paprika Use smoked paprika for a distinct twist
  • 0.5 teaspoon Cayenne Pepper Adjust to suit your taste
  • 150 grams Feta Cheese Or dairy-free feta for a vegan option
  • 50 grams Parmesan Cheese Or a dairy-free alternative
  • 100 grams Jarred Roasted Red Peppers Swap for sun-dried tomatoes if desired

Method
 

Instructions
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut each salmon fillet lengthwise to create a pocket, being careful not to cut all the way through.
  3. Brush each fillet with about 1 tablespoon of olive oil and sprinkle with salt and pepper.
  4. Heat olive oil in a skillet over medium heat. Add spinach, Italian seasoning, paprika, cayenne, salt, and pepper. Sauté until spinach wilts, about 2 minutes.
  5. Remove from heat and mix in jarred roasted red peppers, crumbled feta, and grated Parmesan cheese.
  6. Stuff the salmon fillets with the spinach and feta mixture, packing it tightly inside the pockets.
  7. Bake the stuffed salmon in the preheated oven for about 12 to 17 minutes, checking for doneness.
  8. Let the salmon rest for a couple of minutes before serving with your choice of sides.
