Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice salmon fillets lengthwise to create pockets for stuffing. Place on the lined baking sheet.
  3. Drizzle olive oil over salmon and sprinkle salt and pepper. Coat evenly.
  4. Heat olive oil in a skillet, add spinach, Italian seasoning, paprika, and cayenne. Sauté until spinach wilts.
  5. Mix sautéed spinach with roasted red peppers, feta, and parmesan until well combined.
  6. Stuff each salmon pocket with the filling, pressing gently to secure it.
  7. Bake the salmon in the preheated oven for 12-17 minutes until opaque.
  8. Remove from oven and let rest a few minutes before serving.
