  1. In a medium saucepan, over low heat, add chopped ripe strawberries, filtered water, and granulated sugar. Stir gently until the sugar has fully dissolved, about 3-5 minutes.
  2. Increase the heat to medium and allow the mixture to come to a gentle boil, about 1-2 minutes.
  3. Reduce the heat to low and let the mixture simmer for 20 minutes, stirring frequently and using a potato masher to mash the strawberries.
  4. Remove the saucepan from the heat and let it cool for about 5-10 minutes.
  5. Prepare a fine mesh sieve over a heat-proof bowl. Pour the syrup through the sieve, using a spatula to press the strawberries.
  6. Carefully transfer the strained syrup into a clean glass jar. Allow it to cool completely at room temperature before sealing.
