Step-by-Step Instructions for Spicy Black Bean Burger
  1. In a food processor, add the diced yellow onion, chopped jalapeño, and garlic cloves. Pulse the mixture 5–6 times until finely chopped.
  2. Combine the black beans, rolled oats, yellow corn, sliced green onion, cumin, curry powder, cayenne pepper, and a pinch of salt and pepper in the food processor. Pulse 8 times then scrape down the sides and pulse an additional 5–8 times until your desired texture is reached.
  3. Transfer the mixture to a mixing bowl and cover it with plastic wrap. Refrigerate for at least 2 hours to firm up.
  4. After chilling, remove the mixture and gently stir in the plain breadcrumbs. Adjust seasoning as needed.
  5. Heat a skillet over medium heat and drizzle in a little vegetable oil. Form the chilled mixture into 4 equal patties.
  6. Carefully place the patties in the heated skillet and let them cook for about 5–7 minutes on each side until golden brown.
  7. Transfer the burgers to whole wheat buns and add your favorite toppings. Serve immediately.
