Ingredients
  

For the Drink Concentrate
  • 4 plums ripe or overripe for maximum sweetness and flavor
  • 1/2 cup raw unrefined cane sugar or regular sugar as a substitute
  • 2 cups water for boiling the plums
  • 1/4 teaspoon salt to balance sweetness
  • 1/4 teaspoon black salt optional
  • 1/4 teaspoon black pepper optional
  • 1 tablespoon lemon juice optional
For Serving
  • 1 handful fresh mint leaves for garnish
  • 4 cups sparkling water for serving
  • 2 cups ice for serving chilled

Method
 

Step-by-Step Instructions
  1. Wash ripe or overripe plums thoroughly. In a pot, combine the plums with enough water to cover them. Bring to a boil over medium-high heat, then cover and reduce to a simmer. Cook for 10-15 minutes until soft.
  2. Remove from heat and stir in sugar until dissolved. Allow to cool for about 20 minutes.
  3. Mash the cooled plum mixture into a smooth puree. Strain through a fine sieve to extract juice, leaving seeds and peels behind.
  4. Mix in a pinch of salt to enhance sweetness, adding optional black salt and black pepper if desired. Stir well.
  5. Pour the concentrate into clean, airtight bottles and store in the fridge for 2-3 weeks.
  6. To serve, fill a glass with the plum concentrate halfway, add ice cubes, garnish with mint leaves and lemon juice, then top with sparkling water. Stir gently.
