  • 2 pieces Chicken Breast boneless, skinless, boiled
  • 1 can Black Beans rinsed
  • 1 medium Red Bell Pepper finely diced
  • 1 cup Corn fire-roasted or canned
  • 1/2 medium Red Onion finely diced
  • 1/4 cup Cilantro optional
For the Dressing
  • 1 cup Greek Yogurt full-fat plain
  • 2 tablespoons Lime Juice fresh
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder adjust to taste
  • 1 teaspoon Smoked Paprika optional
  • 1/2 teaspoon Kosher Salt to taste
  • 1/2 teaspoon Black Pepper to taste
  • 1/4 teaspoon Cayenne optional, adjust to taste

Method
 

Preparation Steps
  1. Cook the Chicken by boiling it in water seasoned with salt and pepper until fully cooked.
  2. Shred the Chicken using forks or a stand mixer until finely shredded.
  3. Prepare the Dressing by whisking Greek yogurt, lime juice, cumin, chili powder, paprika, salt, and pepper in a large bowl.
  4. Combine Ingredients by adding shredded chicken, black beans, bell pepper, corn, onion, and cilantro to the dressing; mix well.
  5. Chill the salad for at least 30 minutes to meld flavors.
  6. Serve the salad cold on its own, in tortillas, or with tortilla chips.
