Instructions
  1. Preheat your oven to 400°F (200°C) and grease the muffin tins.
  2. In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together buttermilk, eggs, and melted butter until smooth.
  4. Add the wet mixture to the dry ingredients and stir gently until just combined.
  5. Fold in the corn, bell pepper, and cheddar cheese evenly into the batter.
  6. Fill muffin tins two-thirds full with the batter and bake for 15 to 18 minutes.
  7. Let them cool for 5 minutes, remove from tins, drizzle with honey, and garnish with herbs.
