Cooking Steps
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add baby potatoes in a single layer and cover for about 10 minutes, turning halfway until golden brown and fork-tender. Season with salt and pepper, remove from skillet, and set aside.
- In the same skillet, add another tablespoon of olive oil, layer in the smoked sausage slices, and cook for about 6 minutes until browned. Remove and set aside with the potatoes.
- Increase heat to medium-high, add zucchini, yellow summer squash, and red pepper. Sprinkle with pepper and salt, stir-fry for 7-8 minutes, then add minced garlic and butter for the last minute.
- Return the cooked sausage and baby potatoes to the skillet with the sautéed veggies. Sprinkle in steak seasoning and mix thoroughly, cooking for an additional 2-3 minutes.
- Remove from heat, garnish with chopped parsley, and serve hot.
