Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Once shimmering, add baby potatoes in a single layer and cover for about 10 minutes, turning halfway until golden brown and fork-tender. Season with salt and pepper, remove from skillet, and set aside.
  2. In the same skillet, add another tablespoon of olive oil, layer in the smoked sausage slices, and cook for about 6 minutes until browned. Remove and set aside with the potatoes.
  3. Increase heat to medium-high, add zucchini, yellow summer squash, and red pepper. Sprinkle with pepper and salt, stir-fry for 7-8 minutes, then add minced garlic and butter for the last minute.
  4. Return the cooked sausage and baby potatoes to the skillet with the sautéed veggies. Sprinkle in steak seasoning and mix thoroughly, cooking for an additional 2-3 minutes.
  5. Remove from heat, garnish with chopped parsley, and serve hot.
