Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 diced carrot, 1 diced onion, and 2 diced celery stalks. Sauté for about 5-7 minutes until softened.
  2. Stir in 3 minced garlic cloves and cook for another 1-2 minutes until fragrant.
  3. Add 1 cup of farro, 1 can of drained white beans, and 3 cups of chopped kale. Pour in 6 cups of vegetable broth and add Parmesan cheese rind if desired.
  4. Bring to a boil, reduce to low and cover. Simmer for 30-40 minutes until farro is tender.
  5. Taste and season with salt and pepper, then serve hot.
