Steak Marinade
  • 2 pieces Ribeye Steaks alternatives like flank or skirt can be used
  • 1/4 cup Soy Sauce gluten-free alternative available
  • 2 tablespoons Oyster Sauce for vegetarian option use mushroom oyster sauce
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Sugar can substitute with honey
  • 1 teaspoon Black Pepper freshly ground preferred
  • 2 tablespoons Olive Oil or any neutral oil
Nam Jim Jaew Sauce
  • 1/4 cup Glutinous Rice can use regular rice powder
  • 1 tablespoon Tamarind lemon juice can be a substitute
  • 1 tablespoon Brown Sugar honey or coconut sugar can be used
  • 2 tablespoons Fresh Lime Juice can substitute with lemon juice
  • 1 teaspoon Red Chili Flakes adjust to taste
  • 2 tablespoons Shallots green onions can be used instead
  • 1/4 cup Fresh Cilantro basil may be an alternative

Method
 

Preparation Steps
  1. In a mixing bowl, combine soy sauce, oyster sauce, fish sauce, sugar, black pepper, and olive oil to create the marinade. Coat the ribeye steaks and let sit for at least 30 minutes.
  2. Toast glutinous rice in a skillet over medium heat for about 5 minutes until golden brown. Cool and grind into a fine powder.
  3. In a bowl, whisk together fish sauce, tamarind, brown sugar, and lime juice. Add the toasted rice powder, chili flakes, chopped shallots, and cilantro. Mix well.
  4. Preheat a skillet over medium-high heat, add olive oil and sear the marinated steaks for about 2-3 minutes per side until medium-rare.
  5. Let the steaks rest for 3-5 minutes, slice against the grain, and serve with Nam Jim Jaew sauce.
