Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Wash and peel the sweet potatoes, then slice them into ½-inch rounds.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a mixing bowl.
- Arrange the seasoned rounds on the baking sheet in a single layer and roast for 20-25 minutes, flipping halfway.
- Remove from the oven and sprinkle goat cheese and thyme over each round.
- Return to the oven and bake for an additional 5-7 minutes until the cheese is melted.
- Allow to cool for a few minutes before serving warm.
