- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice each salmon fillet lengthwise to create a pocket for the stuffing.
- Brush the exposed sides of each salmon fillet with 1 tablespoon of olive oil and season with salt and pepper.
- Heat the remaining tablespoon of olive oil in a medium pan over medium heat, add spinach, Italian seasoning, paprika, and cayenne, sauté until the spinach wilts.
- Remove from heat and fold in the roasted red peppers, crumbled feta, and grated Parmesan.
- Stuff the spinach and feta mixture into the pocket of each salmon fillet, pressing gently.
- Place the stuffed salmon fillets on the baking sheet and bake for 12-17 minutes until opaque and flaky.
- Allow to rest for a couple of minutes before serving warm.
