Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each salmon fillet lengthwise to create a pocket for the stuffing.
  3. Brush the exposed sides of each salmon fillet with 1 tablespoon of olive oil and season with salt and pepper.
  4. Heat the remaining tablespoon of olive oil in a medium pan over medium heat, add spinach, Italian seasoning, paprika, and cayenne, sauté until the spinach wilts.
  5. Remove from heat and fold in the roasted red peppers, crumbled feta, and grated Parmesan.
  6. Stuff the spinach and feta mixture into the pocket of each salmon fillet, pressing gently.
  7. Place the stuffed salmon fillets on the baking sheet and bake for 12-17 minutes until opaque and flaky.
  8. Allow to rest for a couple of minutes before serving warm.
