  • 1 head Cauliflower Chopped into small, rice-sized pieces
  • 2 cups Bell Peppers Diced, any variety
  • 2 cups Spinach Rinsed and drained
For the Creamy Filling
  • 1 cup Mozzarella Cheese Shredded, can substitute with plant-based cheese
  • 8 oz Cream Cheese Softened, or Greek yogurt for a lighter twist
For Flavoring
  • 1 teaspoon Garlic Powder Can substitute with fresh garlic

Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Chop the cauliflower into small, rice-sized pieces and dice the bell peppers into bite-sized chunks. Rinse the fresh spinach under running water.
  3. In a large mixing bowl, combine the chopped cauliflower, bell peppers, and spinach with softened cream cheese and shredded mozzarella. Stir until well coated.
  4. Sprinkle in garlic powder, along with salt and pepper to taste; mix until evenly distributed.
  5. Pour the mixture into a greased casserole dish and spread out evenly.
  6. Top with additional mozzarella cheese if desired.
  7. Bake for 25-30 minutes until the top is golden brown and bubbly.
  8. Allow to cool for a few minutes before serving.
