Cooking Steps
- Preheat your oven to 375°F (190°C).
- Chop the cauliflower into small, rice-sized pieces and dice the bell peppers into bite-sized chunks. Rinse the fresh spinach under running water.
- In a large mixing bowl, combine the chopped cauliflower, bell peppers, and spinach with softened cream cheese and shredded mozzarella. Stir until well coated.
- Sprinkle in garlic powder, along with salt and pepper to taste; mix until evenly distributed.
- Pour the mixture into a greased casserole dish and spread out evenly.
- Top with additional mozzarella cheese if desired.
- Bake for 25-30 minutes until the top is golden brown and bubbly.
- Allow to cool for a few minutes before serving.
