Ingredients

  • 1 lb Shrimp Fresh or frozen, seasoned with seafood seasoning
  • 1 lb Ground Sausage Can substitute with ground chicken or turkey
  • 1 medium Onion Chopped
  • 1 cup Bell Peppers Chopped, mixed colors optional
  • 3 cloves Garlic Minced
For the Spices
  • 1 tsp Oregano Dried
  • 1 tsp Thyme Dried
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Chili Powder
  • 1 tsp Black Pepper
  • 0.5 tsp Cayenne Pepper Adjust for spice level
For the Texture
  • 0.25 cup Flour Can substitute with cornstarch for gluten-free
  • 3 cups Chicken Broth Vegetable broth for a vegetarian option
For the Carbohydrate
  • 1.5 cups Long-Grain White Rice Or jasmine rice; brown rice for extra fiber

Method
 

Cooking Instructions
  1. Season shrimp with seafood seasoning. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Cook shrimp for 2-3 minutes per side until pink and opaque. Remove and set aside.
  2. Add remaining oil to the skillet, then add ground sausage. Break apart and cook for 5-7 minutes until no longer pink and crispy.
  3. Add onion, bell peppers, and garlic. Sauté for about 5 minutes until softened.
  4. Sprinkle in oregano, thyme, garlic powder, onion powder, chili powder, black pepper, and cayenne. Stir and then add flour to coat.
  5. Pour in chicken broth and bring to a simmer. Stir for 5-7 minutes until slightly thickened.
  6. Add rice to the skillet and mix. Reduce heat and let simmer for 5 minutes.
  7. Fold the cooked shrimp back into the skillet, heating through for a couple more minutes before serving.
