Ingredients
  

For the Tofu
  • 1 block Super Firm Tofu
  • 2 tablespoons Tamari or soy sauce
  • 3 tablespoons Cornstarch
For the Cabbage Wraps
  • 8 leaves Cabbage Fresh leaves; red cabbage optional
  • 1 medium Onion Red onion or shallots preferred
  • 2 tablespoons High Smoke Point Oil Avocado or canola
For the Seasoning
  • 2 tablespoons Za’atar Spice
  • 1 teaspoon Garlic Powder Adjust to taste
  • 1 teaspoon Coriander
  • 1 teaspoon Smoked Paprika
For the Topping
  • 1/2 cup Pistachios or pepitas for nut-free
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Mint Optional
  • 1 medium Lemon Zest and juice
  • 1 tablespoon Maple Syrup or agave

Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 425°F (220°C). Line baking trays with parchment paper.
  2. Shred the super firm tofu using a box grater onto one of the prepared baking trays.
  3. In a mixing bowl, combine shredded tofu with cornstarch, paprika, coriander, garlic powder, tamari, and oil. Mix until coated.
  4. Slice cabbage and onion thinly. Combine with garlic powder, coriander, thyme, salt, and oil. Toss well and spread on another tray.
  5. Bake both trays for 10 minutes, then toss and rotate their positions. Bake for another 8-10 minutes until crispy.
  6. Mix pistachios, parsley, mint, garlic, za’atar, lemon zest, lemon juice, maple syrup, oil, and salt in a bowl.
  7. Combine roasted tofu and cabbage in a large bowl with the pistachio mixture. Toss well.
  8. Spoon the mixture into warm pita or wraps. Serve and enjoy!
