Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together lemon zest, sumac, olive oil, garlic, salt, pepper, cinnamon, and allspice until combined.
  3. Coat the chicken thighs with the marinade, ensuring all sides are covered. Let rest for at least 30 minutes.
  4. Arrange the marinated chicken thighs on a sheet pan, add plums and shallots, drizzle with honey, and season with additional salt, cinnamon, and allspice.
  5. Tuck a bay leaf among the chicken and plums on the sheet pan.
  6. Roast in the oven for 40-45 minutes until chicken reaches 165°F (74°C) and skin turns golden brown.
  7. Let the dish rest for a few minutes and garnish with fresh thyme leaves before serving.
