- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine finely chopped pistachios, honey, rosemary, sea salt, and black pepper, and mix well.
- Roll out chilled puff pastry to 1/8 inch thickness and cut into 3x3 inch squares.
- Place a piece of Brie in the center of each pastry square, top with pistachio mixture, and fold corners to seal.
- Beat an egg and brush over tops of each pastry for a golden finish.
- Arrange bites on the baking sheet and bake for 15-20 minutes until golden brown.
- Allow to cool slightly, garnish with cranberries or pomegranate seeds, and serve warm.
