  • 1 wheel Brie Cheese Camembert is a great substitute.
  • 1 cup Unsalted Roasted Pistachios Opt for shelled for convenience.
  • 2 tablespoons Honey Raw honey enhances flavor.
  • 1 teaspoon Fresh Rosemary Swap with 1 teaspoon of dried rosemary if needed.
  • 1/2 teaspoon Sea Salt Adjust if using salted pistachios.
  • 1/4 teaspoon Black Pepper Freshly cracked is best for flavor.
  • 1 sheet Puff Pastry Keep chilled until ready to use.
  • 1 large Egg Used for egg wash.
For Garnish
  • 1/4 cup Cranberries or Pomegranate Seeds Adds color and a burst of tartness.

Method
 

Directions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine finely chopped pistachios, honey, rosemary, sea salt, and black pepper, and mix well.
  3. Roll out chilled puff pastry to 1/8 inch thickness and cut into 3x3 inch squares.
  4. Place a piece of Brie in the center of each pastry square, top with pistachio mixture, and fold corners to seal.
  5. Beat an egg and brush over tops of each pastry for a golden finish.
  6. Arrange bites on the baking sheet and bake for 15-20 minutes until golden brown.
  7. Allow to cool slightly, garnish with cranberries or pomegranate seeds, and serve warm.
