- Bring a large pot of salted water to a boil over high heat. Add the lo mein noodles and cook for 1-2 minutes less than the package instructions. Drain the noodles and set aside.
- In a medium bowl, whisk together beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch. Fold in 75% of the minced garlic and ginger. Set aside.
- Preheat a large griddle or skillet over medium heat. Add lean ground beef, breaking into small chunks. Sauté for 2-3 minutes until browned. Add white parts of green onions and cook for an additional 2 minutes.
- Push the beef mixture to one side, add cooking oil, then add remaining minced garlic and ginger. Sauté for about 1 minute.
- Add drained lo mein noodles to the griddle. Toss to coat the noodles in oil and combine with beef mixture. Fry undisturbed for 1-2 minutes.
- Pour the sauce over the noodles and beef, tossing everything together until well coated. Sauté for another 2-3 minutes until the sauce thickens. Garnish with green onion greens and serve hot.
