Ingredients
  

For the Noodles
  • 8 oz Lo Mein Noodles or egg noodles/rice noodles
For the Beef
  • 1 lb Lean Ground Beef 90/10 or 93/7, can substitute with ground turkey or chicken
For the Sauce
  • 1 cup Beef Broth can substitute with chicken or vegetable broth
  • 1/4 cup Low Sodium Soy Sauce can use tamari for gluten-free
  • 2 tbsp Brown Sugar honey or maple syrup can be alternatives
  • 2 tbsp Hoisin Sauce BBQ sauce or soy-sugar mix can be used
  • 1 tbsp Cornstarch can use arrowroot or xanthan gum
  • 3 cloves Minced Garlic fresh is best
  • 1 tbsp Minced Ginger ground ginger can substitute
  • 1/2 tsp Black Pepper white pepper can also be an alternative
For Cooking
  • 2 tbsp High-heat Cooking Oil like avocado oil, can use canola or sunflower oil
For Garnish
  • 2 stalks Green Onions whites and greens separated

Method
 

Step-by-Step Instructions
  1. Bring a large pot of salted water to a boil over high heat. Add the lo mein noodles and cook for 1-2 minutes less than the package instructions. Drain the noodles and set aside.
  2. In a medium bowl, whisk together beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch. Fold in 75% of the minced garlic and ginger. Set aside.
  3. Preheat a large griddle or skillet over medium heat. Add lean ground beef, breaking into small chunks. Sauté for 2-3 minutes until browned. Add white parts of green onions and cook for an additional 2 minutes.
  4. Push the beef mixture to one side, add cooking oil, then add remaining minced garlic and ginger. Sauté for about 1 minute.
  5. Add drained lo mein noodles to the griddle. Toss to coat the noodles in oil and combine with beef mixture. Fry undisturbed for 1-2 minutes.
  6. Pour the sauce over the noodles and beef, tossing everything together until well coated. Sauté for another 2-3 minutes until the sauce thickens. Garnish with green onion greens and serve hot.

Notes
