Cooking Steps
- Preheat your oven to 450°F (232°C).
- Brush both sides of the corn tortillas with canola oil and arrange on a rimmed baking sheet. Bake for 10 minutes, flipping halfway through.
- In a medium saucepan over medium heat, combine shredded rotisserie chicken, salsa, taco seasoning, black beans, and corn. Cook for about 5 minutes until heated through.
- Scoop about 1/2 cup of chicken mixture onto each tortilla and sprinkle with 1/4 cup of shredded cheese on top.
- Return tostadas to the oven for an additional 5 minutes until cheese is melted.
- Garnish with fresh cilantro and diced tomatoes before serving.
