Tostadas Base
  • 6 pieces Corn Tortillas Use for authentic tostada texture.
Chicken Mixture
  • 2 cups Rotisserie Chicken Shredded.
  • 1 cup Salsa Choose mild or spicy based on preference.
  • 1 tablespoon Taco Seasoning Homemade or store-bought.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Canned or frozen, drained if canned.
Toppings
  • 1 cup Cheese Shredded Cheddar or Mexican blend.
  • 1/4 cup Fresh Cilantro Optional.
  • 1 cup Diced Tomatoes Fresh or canned.

Method
 

Cooking Steps
  1. Preheat your oven to 450°F (232°C).
  2. Brush both sides of the corn tortillas with canola oil and arrange on a rimmed baking sheet. Bake for 10 minutes, flipping halfway through.
  3. In a medium saucepan over medium heat, combine shredded rotisserie chicken, salsa, taco seasoning, black beans, and corn. Cook for about 5 minutes until heated through.
  4. Scoop about 1/2 cup of chicken mixture onto each tortilla and sprinkle with 1/4 cup of shredded cheese on top.
  5. Return tostadas to the oven for an additional 5 minutes until cheese is melted.
  6. Garnish with fresh cilantro and diced tomatoes before serving.
