Ingredients
  

For the Stir Fry
  • 1 pound ground beef can swap with ground turkey or chicken
  • 2 tablespoons olive oil extra virgin recommended
  • 1 small onion diced, can be omitted
  • 2 cloves garlic minced, can substitute with garlic powder (1/2 tsp)
  • 1 zucchini chopped, bell peppers or eggplant can substitute
  • 1 red bell pepper chopped, green bell pepper can be used
  • ½ cup cherry tomatoes halved, canned diced tomatoes can be used
  • ¼ cup kalamata olives sliced, green olives can substitute
  • 1 teaspoon dried oregano can swap for Italian seasoning
  • ½ teaspoon ground cumin can replace with coriander
  • ½ teaspoon paprika smoked paprika adds extra flavor
  • ¼ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper adjust to taste
  • ¼ cup feta cheese crumbled, can use nutritional yeast for dairy-free
  • 2 tablespoons fresh parsley chopped, can be omitted
  • ½ lemon juice juice of half a lemon

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 small diced onion and 2 minced garlic cloves, sauté for 2-3 minutes until onion is translucent.
  3. Incorporate 1 pound of ground beef, cooking for 5-7 minutes until browned.
  4. Stir in 1 chopped zucchini, 1 chopped red bell pepper, and ½ cup of halved cherry tomatoes, cook for 5-7 minutes.
  5. Add ¼ cup of sliced Kalamata olives, 1 teaspoon of dried oregano, ½ teaspoon of ground cumin, and ½ teaspoon of paprika with salt and pepper, stir and cook for 2-3 minutes.
  6. Remove from heat, fold in ¼ cup crumbled feta cheese and 2 tablespoons chopped fresh parsley, squeeze juice of ½ lemon.
  7. Serve immediately, enjoy on its own or over quinoa or brown rice.
