Step-by-Step Instructions
- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add 1 small diced onion and 2 minced garlic cloves, sauté for 2-3 minutes until onion is translucent.
- Incorporate 1 pound of ground beef, cooking for 5-7 minutes until browned.
- Stir in 1 chopped zucchini, 1 chopped red bell pepper, and ½ cup of halved cherry tomatoes, cook for 5-7 minutes.
- Add ¼ cup of sliced Kalamata olives, 1 teaspoon of dried oregano, ½ teaspoon of ground cumin, and ½ teaspoon of paprika with salt and pepper, stir and cook for 2-3 minutes.
- Remove from heat, fold in ¼ cup crumbled feta cheese and 2 tablespoons chopped fresh parsley, squeeze juice of ½ lemon.
- Serve immediately, enjoy on its own or over quinoa or brown rice.
