  • 1 tablespoon Brown Sugar White sugar or honey can be used as substitutes
  • 1/4 cup Low-Sodium Soy Sauce or Tamari Tamari is gluten-free
  • 2 cups Beef Stock Vegetable broth can be used for a lighter option
  • 1/4 cup Fresh Cilantro Parsley can be used as an alternative
  • 1 cup Kimchi A traditional Korean side

Method
 

Cooking Steps
  1. Generously season the chuck roast with kosher salt, then let it sit for 15-30 minutes.
  2. In a large Dutch oven, heat vegetable oil and sear the roast on both sides for 5-7 minutes.
  3. Remove the roast and sauté onion, garlic, and ginger for 3-5 minutes.
  4. Return the roast to the pot and mix in gochujang, brown sugar, and soy sauce.
  5. Add beef stock and bring to a simmer, then cover and reduce heat to low.
  6. Transfer pot to a preheated oven at 300°F (150°C) and bake for 2 hours.
  7. Remove from oven and rest the roast for 10 minutes before slicing and serving.
