Cooking Steps
- Generously season the chuck roast with kosher salt, then let it sit for 15-30 minutes.
- In a large Dutch oven, heat vegetable oil and sear the roast on both sides for 5-7 minutes.
- Remove the roast and sauté onion, garlic, and ginger for 3-5 minutes.
- Return the roast to the pot and mix in gochujang, brown sugar, and soy sauce.
- Add beef stock and bring to a simmer, then cover and reduce heat to low.
- Transfer pot to a preheated oven at 300°F (150°C) and bake for 2 hours.
- Remove from oven and rest the roast for 10 minutes before slicing and serving.
