- In a microwave-safe bowl, add the mozzarella cheese and microwave for about 1 minute. Stir and continue to microwave in 10-second intervals until fully melted.
- Combine the almond flour, coconut flour, Italian seasoning, salt, and pepper in a large mixing bowl.
- Add the melted mozzarella to the dry ingredients and mix until combined.
- Allow the mixture to cool slightly, then crack an egg into it and mix until a moist dough forms.
- Place the dough on a sheet of parchment paper and roll it out into a rectangle, approximately ¼ inch thick.
- Make diagonal cuts into the dough, leaving a 4-inch section uncut in the center.
- Layer the uncut section of dough with slices of deli ham followed by cheddar cheese.
- Fold over the cut sections of dough, covering the filling, and secure the edges.
- Transfer to a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Let the Stromboli cool slightly, then slice into sections and serve.
